Great coffee is more than a morning ritual — it's a craft built on science, geography, and generations of farming expertise. These guides distil what we've learned sourcing and roasting SCA 90+ speciality lots, so you can taste the difference in every brew.

Why does speciality coffee reward education? Because every variable matters. Altitude shapes density. Processing method shapes acidity. A 10-second change in extraction time can turn balanced into bitter. The 80–100 SCA score isn't arbitrary — it's a structured assessment of aroma, flavour, body, and balance against a global reference. Once you understand what goes into a 92 or a 93, you start tasting coffee differently.

Our two coffees live at the top end of that scale. Jaguar (SCA 92, Parainema variety) shows caramel and stone fruit; Black Panther (SCA 93, Geisha variety) leans into blackberry, cocoa, and the floral character that makes Geisha the world's most sought-after coffee. Both come from Finca Jerusalén in Honduras, where direct trade and altitude do most of the heavy lifting before the beans ever reach our roaster.
